With the wedding quickly approaching we have been eating a lot healthier these days. Every day we are experimenting with new recipes. We had an epic meatloaf fail last week and it was especially disappointing after it made the house smell so good. After that mishap we were very hungry and wanted some thing fast, easy and still heathy. Low and behold pesto zoodles. yes. Zoodles. What is a zoodle? you ask. A noodle made out of zucchini (or squash. We did both.) All you need is a neat little julienne peeler. It's as easy as peeling a carrot, except it makes thin little noodle like strands. BRILLIANT I tell you! We had some basil laying around so we made some pesto and tossed it all together in a pan for about 5 minutes until it got hot and the zoodles softened a bit. I highly recommend this simple and delicious recipe. This is a great go to for a quick dish and fulfills that pasta craving. Now go on and try! xo Rebecca
Zoodles
4 Zucchinis
1/2 tsp Coconut oil
Pesto
Handful of Basil
1 Garlic clove
2 tbs Almonds
1 tbs Olive oil
Dash of salt to taste
1.) Julienne zucchini.
2.) Place all of the pesto ingredients in food processor and pulse until it becomes a paste consistency.
3.) Heat a pan with coconut oil and toss zoodles in with pesto until warmed. Zoodles will soften and ta-da! You're done.
